We rated Pie #14 Double Strawberry Ice Cream Pie on a scale of 1 - 5:
Taste - 4.5
Appearance - 4.5
Crust - 3.75
Overall - 4.25
The crust on this pie was a little tough but this could have been because we had to broil it instead of baking it (oven still not fixed!). Overall we loved this pie especially after working outside in the yard in 80 degree plus weather. It tasted great!
Simple recipe. . .
1 1/2 cups Oreo cookie crumbs (remove white filling)
5 tablespoons unsalted butter, melted and slightly cooled
1/8 teaspoon salt
Strawberry ice cream
Strawberries for garnish, if desired
Finely grind the cookies and combine with melted butter and salt. Press evenly across the bottom and sides of a 9-inch pie plate. Bake in 350 degree oven for 6-8 minutes or until crisp. Let cool completely before filling. To make it simpler, you can purchase a ready made Oreo cookie crust.
Let the ice cream soften at room temperature. Fill pie crust with ice cream and top with whipped topping. Freeze until firm. Before serving, add strawberries and chocolate syrup if desired.

While cleaning out Dad's house last weekend, we discovered several things we hadn't seen before. . .

We rated Pie #13 Irish Beef Hand Pie on a scale of 1 - 5:
Taste - 3.5
Appearance - 3.5
Crust - 4.0
Overall - 3.66
As our oven still isn't working (Keith, the repairman, has been ill), we had to grill these outside and then browned them under the broiler. They were pretty good but need additional spices and actually tasted better the next morning.

We rated Pie #12 Lime Daiquiri on a scale of 1 - 5:
Taste - 3.6
Appearance - 4.25
Crust - 4.5
Overall - 4.1
We had a difference of opinion on this pie as Chuck rated the taste as 4.25 and Rita gave it a 3.0. Rita didn't like the chiffony (is that a word?) texture of the pie.

We rated Pie #11 Chocolate Cream Pie on a scale of 1 - 5:
Taste - 4.5
Appearance - 3.5
Crust - 3.5
Overall - 3.83
This pie was made two days before serving so we decided to use Cool Whip instead of whipped cream. We'll definitely use whipped cream on our next cream pie. Also, the crust was slightly overbaked but the family enjoyed it anyway!
